Oxalic acid rate in vegetables

I read somewhere that the oxalic acid rate in vegetables changes depending on how old the vegetable is. Well is it best to have a low or high oxalic acid rate? & when is the rate low or high... when it's unripe, ripe or old?

Low oxalic acid, because it is this which can combine with calcium and aid the formation of renal/bladder stones.
Spinach is the main offender in terms of leafy greens that piggies may enjoy.

Unfortunately I can't say when the levels are high/low in relation to the age of a plant and Google is not being kind to me this evening. rolleyes

I presume it's similar to normal spinach.

Spinach beet is another variety of spinach, so yes, it is high oxalic acid. Not a problem as long as you don't overfeed it - best to save it as a special treat!
 
I need to get rid of it as I'm turfing over my veg patch, I think I'll donate most of it to my mum's new bunnies instead of feeding it to my rodents whilst they're so ill.
