My guinea pigs are over a year old and still get scared easily, is that normal? They also hate me petting them they walk away if I try to

Yes that is all normal.
As prey animals their default setting is fear.
Not wanting to be touched it also very normal. Of my four (two are still with me) only one of them enjoys a little stroke on his head

Perfectly normal behaviour.
I have a pair who dislike being held or petted.
They prefer to hide in a tunnel or under the hay if anyone is around.
Given their rotten start I doubt they will ever really like their humans.
Accept them for who they are and work at their pace.

My Stripe is used to handling because he's been sick so much so I can have him on my lap and pet him for short stints.
Chez hates being touched. I just accept that. After nine months, he let me pet his cheek for the first time yesterday. But not this morning.
