Yes that is all normal.
As prey animals their default setting is fear.
Not wanting to be touched it also very normal. Of my four (two are still with me) only one of them enjoys a little stroke on his head
Perfectly normal behaviour.
I have a pair who dislike being held or petted.
They prefer to hide in a tunnel or under the hay if anyone is around.
Given their rotten start I doubt they will ever really like their humans.
Accept them for who they are and work at their pace.
