Ran out of veggies :(

I just ran out of veggies and we have a snow storm happening so the roads are unsafe if I knew I would of stocked up before. Would they be alright on pellets and hay for like a day or two until the roads get cleared? I still have a few things but not much of what they can have on the daily.

The only thing they need constantly available is hay so provided you have enough of that then they will be absolutely fine.
Don’t overfeed pellets while you don’t have veggies - stick to the limited one tablespoon of pellets and instead give extra hay.
