Hey there
As it's getting colder now I'm planning on getting a large she's for my garden and keeping all 3 (soon to be 4) of my guinea pigs in there is two separate two-tier hutches, with plenty of heated pads and cosys ext. will they be okay through winter? As I can't bring them inside anymore as my mum has changed their precious room into an office now.. Was thinking if I ensure that there are both covered with thermol covers which I already have, and have loads if heat pads and stuff for them to snuggle too, and curtains and stuff over windows to keep from the draft, I think they should be okay... Right?

Hi, how old are they? Are they all well? Lots of people keep rabbits and piggies in their sheds during the winter so you should be fine as long as they are well. My friend kept her boys In her shed during last winter and they don't have snuggle sacks, blankets etc just hay bedding and they were ok. I do think the more warmth you add the better so like you said pet safe heat pads, fleece, snuggle sacks etc. the cover is good too another great tip is an big old thick duvet over the hutch I think it's best draped down the back/ sides and on top of the hutch cover. :)
They need light so a shed with a window is best, if the shed is just for piggies you could think about laying down an oddment of Lino on the floor and make a run attached to their hutch so they can run about during the day if they want too.
Here's my run attached to my hutch to give you an idea of what I meant (my piggies are 4 months old they will have a bigger run once they are bigger)

Looks perfect, I would line the floor with Lino and it will help you a lot during cleaning out. I've lined my hutch with it and it makes cleaning out so simple :)
