The poor little boy is obviously frightened by being picked up.
You can either try to pick him up in a towel or try to teach him to come into a "shuttle" (padded shoebox or an upturned pigloo), so you do not have to handle him during pick up. Small confined spaces seem to calm down a frightened piggy. Turn the pick up into a ritual by always the same words in the same tone, so it doesn't look like random violence anymore.
This is the contraption I have used with my nervous boy Llewelyn. He was very cooperative once he caught on because it was so much less stressful:
Now my girls are used to their new cosy from Polly (threelittlepigs), I take the houses out of their run when I want to get them out and put the cosy in. They come over and hop in and I can just pick them up in the cosy. Much less stressful for all of us. Flumpet's a biter and has taken to it very well. She also sits for longer on my lap in the cosy than just on a towel as I think she feels more secure.
