Today she kept coming to the door and there was no way she was getting more treats out of me. So I tried to rub her cheek, kind of like I do with my cat. It just felt like the thing to do. And her reaction SEEMED like she loved it. But if I've learned anything in my research it's that they don't always feel the way we think they do. What are your thoughts?

She looks happy to me. Gently rubbing the area around the eyes or cheek is the piggy way of conveying affection.

How big is your cage? It looks rather small to me in the video.
 
She would almost definitely run away if she wasn't keen as she has the space to do so. Guinea pigs do often freeze when scared but this didn't look like that to me as she moved away slowly at the end rather than running to hide.
