does coriander have to be fresh off the plant or can i give my babies this?

That is absolutely fine. I buy bagged coriander but also grow it myself (bagged to get me through times when I’m waiting for more growth!)

A couple of sprigs each per day from a bag or cut from the growing plant is fine, and they will love it.

The guide says a few sprigs, but I tend to give a bit more than that - about five sprigs each.
If it’s their first time having it, then just one or two sprigs each to start with

Coriander is top herb here and we give it most days. Some days it’s a big handful as that is “tea” but other days a few sprigs alongside other things.
