Christmas Puddings

I made pudding once this year my first time...I added to much baking soda........it all became big glops of soap coming out of oven


Never mind, you'll know next time. When I used to bake I was always making mistakes, sometimes salvagable and sometimes not! My partner is gluten intolerant so I don't bake now.
 
Aww I love Christmas pudding especially with brandy sauce oooo no one else is really a fan. We brought some toffee melting middle sponge yesterday with chocolate sauce from Lidl. Hubby has told me it goes off today and that it can't be frozen to keep for Christmas as planned so we will have to eat it today. I feel he is lying after I keep eyeing it up in the fridge but I won't double check :lol!:

Have you tried Doves Farm flour?
My husband is gluten & dairy intolerant and loves his cake so I use Doves Farm. It works well

That's good to know, my little nephew was recently diagnosed with gluten and dairy allergies and our shop bought gluten free puff pastry yesterday didnt really puff... it sort of turned into razor sharp brown crisps before it puffed but the little chap didnt mind bless him, we were making jam tarts so he just over compensated with too much jam and ate them anyway!
 
So jealous - no Christmas pud here, but I might have to make some just for me.
However my wonderful MIL also stocks up and makes me a couple for when we visit over New Year.
I love Christmas pudding :drool: :drool: :drool:

Ooo I have two gluten free cookbooks somewhere from when I was desperately trying anything to avoid surgery. One was Honeybuns gluten-free baking chock full of tasty cakes and biscuits. I have a feeling that the other one was Phil Vickery and had the best savoury scones in I had ever eaten. They were parmesan and roasted garlic, always went down a storm when I baked them

MUST be with homemade brandy sauce (very generous on the brandy too btw:beer:) or else I won't eat it. Eating it with cream is just :vom:. I'd rather have it plain thank you very much!

I've not heard of that one @Merab's Slave , thank you for the tip, I'll look out for it. When he was first diagnosed we tried all sorts of gluten free flour but he still had problems with it. To be honest he has so many food intolerances/allergies now (getting worse) we have become scared of trying new things. When you use Dove's flour do you bake normal recipies or use the gluten free ones? I found with gluten free recipies they contained a lot of fats which he also has problems with.

I just use a basic Victoria sponge recipe with soya spread and the Doves gluten free SR flour.
I use large eggs as gluten free baking can be dry and sometimes add fresh fruit which also helps the moistness.
Sorry you’re struggling with your partner intolerances- it took us a lot of trial and error to find what worked. My attempt at biscuits was a total disaster.

I can’t do brandy sauce - as my husband doesn’t eat the puddings I usually make myself custard which he doesn’t like either
 
I used to work in a place that made Christmas puddings, they were lovely :drool:
I usually buy Lidls own now, not so much faff & mess.

I usually make the brandy butter for Christmas a week or two before the big day, I make a big batch, split into 3 & pop in the freezer. I usually use the same ramikins as they're a nice size & freezer proof.
One year however I got caught out... Took the ramikin out of the freezer to defrost in the fridge overnight, took the lid off to take in with the Christmas pud to put on the table & found it was full of defrosted butter beans!
Darn! :oops:

I did forget to put glycerin in the Christmas cake royal icing one year too. Wowzers that nearly broke the electric knife & a hammer was needed to break into the icing on top, the family have mentioned this nearly every year for about 20+yrs now! ⚒

Heather were your spiced buns made with gluten free flour or just the usual flour?
They were very tasty especially warmed a little. mmmmm
